I, once again, had the pleasure of hosting the cooking segment for the Daniel Plan meetings at our church this year. Once a week, for six weeks, I had twenty minutes to demonstrate, to 150 people, how to prepare delicious, clean and healthy food for our family.
The problem with that? I had to come up with six recipes that were clean, healthy and delicious!
If you’ve known me for more than five minutes, then you know that my best friend is butter. My second best friend is heavy whipping cream and my third best friend is a hot buttered biscuit. So what does this mean? It means that cooking clean and healthy is a real stretch for me. The main reason I find it so difficult is because, I WILL NOT, under any circumstances, cook or demonstrate ANYTHING that is not slap-yo-mamma delicious. I will not waste my time or yours with a mediocre recipe with lack-luster results.
Now that we’ve got that cleared up and outta the way…Boy Howdy, do I have a delicious, clean eating, Daniel Plan friendly recipe for you today! When I make this recipe I double it (because I’m an all or nothing kind of girl) then I spread it on to a jelly roll pan (aka half sheet pan) approx 17x12x1. If you want to half this recipe, which is simple to do, you can use a 9×13 pan. These must be kept refrigerated, otherwise they will become soft and messy. They will keep in the refrigerator for a good while if you keep them sealed tight in a plastic container, like for weeks.
Chocolate, Peanut Butter And Oatmeal No-Bake Bars
1 16 oz jar (2 cups) natural peanut butter. I use Smuckers chunky
1 cup honey. Use local honey if you can. I just go next door and get mine from Uncle Curtie 😉
1 cup coconut oil
4 cups old-fashioned oats
2 cups unsweetened, shredded coconut
1 cup walnuts, coarsely chopped
2 1/2 cups dark chocolate chips, I use Ghirardelli 60% Cacao
2 teaspoons vanilla
In a large heavy pot, melt peanut butter, honey, and coconut oil over medium heat. Heat just until melted, being careful not to let it burn.
Once the mix is melted, remove from heat and stir in the oats, coconut, chocolate chips, walnuts and vanilla.
Spread into a jelly roll and refrigerate. Once its firm cut into squares and gobble up.
