Years ago I took a pan of these delicious lemon bars to the girls at salon 66 in verdigris, Oklahoma. This was one of those “just for the heck of it” kind of gifts I like to give every so often to say, thank you! Since that day, there have been many requests for these sweet and tart bars from the girls at the shop, as well as some of their clients. One client, in particular, has been asking for the recipe so I decided to post it for all to enjoy.

The best part about these bars, besides being delicious, is the fact that most of the ingredients will already be in your kitchen without making a run to the store….Oh, and the fact that they’re easy peasy!

Lemon Bars

1 cup cold butter (two sticks)
2 cups plain flour
1/2 cup powdered sugar

Cut the cold butter into flour and powdered sugar with a pastry cutter, mix until crumbly. Pack this mixture into the bottom of a 9×13 dish. Bake at 350 for 20 to 25 minutes or until light brown. While this is baking you can start on the lemon topping.

4 eggs
2 cups granulated sugar
6 tablespoons lemon juice or ReaLemon
1/2 teaspoon salt
4 tablespoons flour

Mix well, all of the above ingredients and pour over hot crust. Bake for another 30 minutes or until mixture feels solid. While still warm, dust with powered sugar. After they have cooled completely cut into bars and eat up!

P.S. These are perfect for wedding and baby showers!

P.S.S. Don’t breath in while you’re biting into your bar because you’ll choke to death on the powered sugar. Trust me, I know!
