I found this recipe about six years ago in a Southern Living Magazine and changed it a bit to make it my own. If have made these delicious sandwiches to serve 200 people and I have made them to serve the six in my family…..they are a hit every time!!
The next time you have a super bowl party, a birthday party or just a family gathering, give this hot sandwich a try….I promise, it will be a hit and you will be a hero!
First, I start with an Asiago Focaccia bread loaf. I buy mine at Panara Bread….it’s round, it’s beautiful and has a rich, wonderful flavor. Perfect when baked!
Take the loaf, cut it in half horizontally using a serrated knife. Open it up and on the inside of the top half spread with this spinach concoction:
19 oz. Frozen spinach (thawed and juices squeezed out)
1 package hidden valley dip mix
8 oz. Sour cream
1 cup mayonnaise
1 med onion chopped very fine
1 can water chestnuts drained and finely chopped
8 oz. Cream cheese
You can add a little shredded Swiss cheese if you like (I do!)
Heat this mixture on the stove top until heated through. Put as much or as little as you like on your sandwich. If you will notice, this is basically a spinach dip recipe. Use what you need on your sandwiches and serve the rest with crackers!
Now, how you finish your sandwich creation is up to you. You can use any combination of meat and cheese you like, with as much as you want……BUT…..if you want to do what I do…..follow these steps. Place on your sandwich:
4 slices of Black Forest ham
4 slices of roast turkey
4 slices provolone cheese
Wrap the sandwich in aluminum foil and bake at 450 degrees for ten minutes. After it has cooled just a little bit, cut it in four wedges and enjoy!
