Lately, my new saying has been, “when you’re starving to death, everything tastes good”. I have found this to be true in recent months. If you would have ask me a year ago if I like hummus, I would have curled my lip and said, with great conviction,”no!” But, after cleaning up my diet a bit, I found myself near starvation and desperately looking for something satisfying and flavorful to snack on.

-I love to snack on food throughout the day
-I will not waste my time or calories on bland or boring food
-I only share recipes that are delicious and full of flavor
This hummus recipe is just that. Delicious and full of that rich roasted garlic flavor. You guessed it, now I LOVE hummus! Look here to learn how to make roasted garlic.
ROASTED GARLIC HUMMUS
2 cans garbanzo beans (chick peas)
3 tablespoons tahini (or peanut butter or almond butter)
1 head roasted garlic (add more for a stronger garlic taste)
4 tablespoons olive oil
1/2 cup warm water
1 1/2 teaspoon sea salt
Juice of one lemon
Drain and rinse throughly two cans of garbanzo beans and put into the bowl of a food processor. Add the rest of the listed ingredients. Pulse until smooth and creamy. If the mixture is too think, add another tablespoon of olive oil and/or more warm water. Give it a test taste, if you like (and I like) you could add more garlic (and I do) for a richer, more flavorful taste. Pulse until you get the texture and consistency you like.
Serve with celery, carrots, pita bread or baked corn chips.
