I will eat anything chocolate….except a chocolate covered cockroach.
Chocolate covered anything
Whether it’s dark, milk, white or salted; chipped, shaved, curled or melted; foriegn or domestic; expensive or cheep…..I love it all! With that being said, I’m pretty sure I eat my fair share, and then some, every year.
If you will notice, I didn’t list chocolate cake as one of my favorites, that’s because I was saving my number one…most favoritest way to enjoy chocolate till the very end, because that’s what this post is about…
As a caterer, I have served this chocolate cake to hundreds…no, make that thousands of people over the years. And without fail, every one of them LOVE this recipe!
This is not your average chocolate cake people….as a matter of fact, it is so special that I felt it needed a special name to go along with it. Something catchy. Something clever. Something people wouldn’t forget.
Remember the better than sex cake?
Now THAT was a clever name! I will never forget the first time I heard of that cake. My Aunt Joyce brought it to a family reunion. When she walked in with this wonderful chocolate concoction, everyone gathered around to see what she had brought. “oh that looks wonderful”, someone said, “what’s it called?” She had such a great sense of humor….coupled along with a good dose of orneriness….she proudly proclaimed , “it’s called, Better Than Sex Cake, but I don’t know what all the fuss is about….heck, a pone of corn bread is better than sex!” That story has been told many times in our family, and every time it gets a big laugh!
Finally, after much thought, I decided to call this slice of heaven on a fork, Pimped Out Chocolate Cake. I thought it was fitting sense you begin with a box of cake mix and then you pimp it out, with butter, sour cream, pudding mix and chocolate chips, then you ice it with a chocolate cream cheese icing….I literally just gained three pounds, just by talking about it, but oh is it worth it!
Ok, enough jibber jabber. Let’s get started!
Pimped Out Chocolate Cake
1 box devil’s food cake mix
1 (3.9 ounce) package instant chocolate pudding mix
2 cups sour cream
2 sticks melted butter (I use salted butter)
1 teaspoon of almond extract
1/2 teaspoon vanilla extract
2 cups semi sweet chocolate chips
Preheat oven to 350 degrees. Grease a 9×13 dish or three round cake pans for a layered cake.
In a large bowl, stir together the cake mix and pudding mix. To that, add the sour cream, melted butter, eggs, and extracts, mix well with an electric mixer, stop and scrape the bowl and mix again until well blended. Now add your chocolate chips and blend well.
Pour the cake mix into your prepared pan and bake for 50 minuts or so. This is a heavy cake so it may take a little longer depending on how you’re cooking it…in one pan or three smaller ones. Check it with a tooth pick in the center of the cake, if it comes out fairly clean then it’s done. Let it cool compleatly and ice with the Chocolate Cream Cheese Icing.
Chocolate Cream Cheese Icing
8 ounces of cream cheese, softened
1 stick salted butter, softened
16 ounces powdered sugar
1/4 cup cocoa powder
1/8 teaspoon salt
1 teaspoon vanilla
In a large mixing bowl, cream butter and cream cheese with an electric mixer. After it is well blended, add the powdered sugar, cocoa, salt and vanilla. Mix well and frost on cooled cake.
