As a caterer, I have probably made this coconut cake 724 times…and all 724 times, it was an unbelievable hit! Many times, after serving this cake, guests have come up to me and said, “I typically don’t like coconut but this is wonderful….can I have the recipe?”
So after many requests, here it is.
WARNING! If you serve this at a dinner party or take it to a pot luck….you will be like a rock star. People will chant your name and ask for your autograph and throw their undergarments at your feet…well, not really but they will want to be your new best
Cream Of Coconut Cake
1 box yellow cake mix (baked as directed)
1 can cream of coconut (found in the mixed drink isle)
1 can Eagle Brand condensed milk
1 12 oz. tub of Cool Whip
1 bag flaked coconut
Bake the cake mix in a 9×13 dish according to directions. While still warm punch holes in the cake (this will help the yumminess to sink in!)
In a small bowl mix the cream of coconut and cond. milk and pour over warm cake. allow cake to cool completely.
Once the cake has had time to cool spread the cool whip on and then top it with the flaked coconut. Keep refrigerated.
LAYERED CAKE VERSION
This is the same delicious recipe, it’s just prepared a little different.
After the batter is made according to box directions, divide the batter evenly into three round or square cake pans that have been sprayed with baking spray and lightly floured. Bake according to directions. Once the cake is done, place on a wire rack to cool. When they are cool enough to handle, take them out of the pan and put the cake rounds on cookie sheets. Now is the time to poke holes on the cakes and pour the cream of coconut mixture over each one until it is all gone and the cakes are throughly saturated. Let this soak in over night in the refrigerator. It’s important to let it get cold so it won’t fall apart when assembling the cake.
When your ready to assemble your cake, put your first layer on a cake plate, spread a thin layer, about an 1/8 of an inch, of cool whip and sprinkle some coconut on top of that. Repeat this process two more times, ending with a nice think layer of cool whip all over the cake (just like icing) then gently, using your hands, pat the coconut on the cake until it is totally covered.
The finished product is BEAUTIFUL!
