Last month was Devin’s birthday. For his birthday cake he requested his favorite, buttermilk pound cake. As you can tell by the name (pound cake) this is not a figure friendly recipe at all. The way I see it, if you are celebrating a special occasion……….WHO CARES, RIGHT? 

 This cake could be used to mark any special occasion such as an Anniversary, new baby, new job or a house-warming. It doesn’t even have to be a special day… could just celebrate Wednesday ;-)You could even make it for, National Act of Random Kindness Day, which is today! And don’t forget about Thanksgiving!

Heck, this cake is good enough to make an average day, above average, instantly!

I found this recipe 23 years ago out of necessity. A friend, who was leaving the country for an extended vacation, gave me what was in her refrigerator so it wouldn’t go to waste. One of the things she gave me was a carton of buttermilk. Buttermilk? What the heck am I supposed to do with buttermilk? I didn’t want to throw it away so I began to thumb through my cookbooks to see what I could find with buttermilk in it. (I only had a few back then) I came across a church cookbook that my grandmother had given me as a wedding present. Church cookbooks are by far my favorites because church ladies know how to cook! It was entitled, Blessed Assurance Cookbook from East Salem Baptist Church in Leakesville Mississippi. I went straight to the recipe index and began to go through the “B’s” for anything with buttermilk. There was buttermilk corn bread, Buttermilk pie, then I saw it! Buttermilk pound cake, on page 71, by a Miss Doris Neel.

I made the cake that day and many more times since then. Last year I made it for valentine’s day in a heart-shaped bundt pan. I filled the hole with fresh strawberries…… It was just beautiful. I have never shared the recipe until now. I wanted to share it with you, my favorite people, my faithful readers!

Ok……….here I go……..whew…….this is harder than I thought it would be…..ok, I’m ready now.


3 Cups plain flour

1/2 t. baking soda

1/2 t. salt

1 cup real butter at room temp

1 cup buttermilk

5 eggs separated

2 1/2 cups sugar

1 t. vanilla extract

1 t. almond extract

In a large bowl cream the sugar and butter with an electric mixer. Add the eggs yolks all at one time to sugar mixture, mix well (reserve the egg whites). Measure your buttermilk and dessolve your baking soda in it. Pour it in the sugar mixture and mix well. Add your flavorings. In a separate bowl mix all of your dry ingredients and then add to your sugar mixture.

Beat the egg whites in a separate bowl with an electric mixer until they are stiff. Fold them into batter.

Pour the batter into a well-greased and floured tube pan. Bake at 300 until a knife comes out clean, about an hour and a half.

Serve this with real whipped cream and some sweetened strawberries and you will be the hit of the party!

By the way, March 4th is National Pound Cake Day…..go crazy!
