In the past three months I have cooked a lot. A whole lot! I would say that In the months of October, November and December, I cooked for about 800 people. One of the events I cooked for was our church’s annual staff Christmas dinner. This included the day care staff, the school staff and the church staff. All together we served about 250 people. It was a wonderful evening (it was really crazy behind the scenes but still wonderful).
One of the dishes I served was, cheesy potatoes or as some people call it, hash brown casserole. Either way, it is DE-VINE! And oh so easy!
Every time I serve this ooey gooey dish of goodness I have people ask if I would please share the recipe.
So, just for you, as a thank you for being such faithful readers, here it is.
2 lbs. Hash browns, shredded or cubed, either one will do
2 t. Salt
1/2 cup chopped onions
1 can cream of chicken soup
1/2 stick melted butter
1 t. Black pepper
1 pt. Sour cream
2 cups shredded cheddar cheese
Mix all of the above ingredients and bake at 350 for 45 minutes
*sometimes I add a tablespoon or so of flour to the mixture to thicken, totally optional.
Now go to the store, buy the stuff and serve this to your family! Let me know how they like it.
